A Journey from Rocher to Geylang East

Eastern Highland’s Vegan Cake Journey

For many amateur bakers, the traditional cake option among classics undoubtedly lies in the expertise of making Pandan Chiffon Cake. Seeking simplicity yet appearing challenging, this soft delicacy has stood the test of time, leaving many reminiscing over its enduring appeal. In catering to vegetarians, abstaining from meat, eggs, dairy, and animal-derived ingredients, it remains true to its tradition. In the local market, particularly in providing delicious cakes for vegetarians, Eastern Highland Healthy Cake House, with its passionate bakers, stands as one of the top choices.

Located at 1 Geylang East Avenue, Eastern Highland Healthy Cake House offers delicious vegetarian cakes and also provides packaged products for both vegetarian and non-vegetarian bakers. Since the 90s, Mr. Chang Chew Swee has owned a humble storefront at Rochor Centre, eventually relocating to its current location to continue serving its range of popular cakes and bread. With an array of palate-pleasing bread and cake products, Eastern Highland caters to strong sales, especially from different ethnic groups, particularly during cultural and religious festivities. Eggs play a crucial role as emulsifiers and leavening agents in the baking process. When eliminating eggs, milk, cream, and butter, Mr. Chang applies his knowledge and experience in vegetarian ingredients to create a ranked, flavorful, and visually appealing range of pastries. Many cakes and bread include organic ingredients sourced from reputable farms and global suppliers. Complying with high-quality ingredients and committed to providing customers with a beneficial health alternative – fat-laden cakes, it’s no wonder Eastern Highland attracts a young, vibrant crowd and office workers purchasing pastries.

With a mission to provide choices for vegetarian customers, Mr. Chang often travels to Taiwan, Malaysia, and China to understand food developments and trends. Being the first to offer bamboo charcoal bread in Singapore – featuring toxin-removal properties and vending drinks such as barley malt juice, is commendable for its health benefits. Despite technological advancements, baking remains a labor-intensive process. Acknowledging the heavy involvement in daily baking, Mr. Chang admits to accepting the challenges associated with this trade. With close attention to every preparation stage, recipe, and oven skill, only through his daily hard work would he understand the industry’s employee shortage issue. Aside from handling daily operations, his passion lies in regularly testing new recipes, always eager to offer something new to customers. Currently, the Pandan Chiffon Cake sold in the store has taken almost a decade to perfect, boasting a fluffy texture without eggs, milk, or cream.

As the most popular cake shop, Eastern Highland has received several local and regional inquiries on how to continue expanding and franchising. With a focus on quality and service, fearing the loss of existing loyal customers, Mr. Chang has declined these mass production methods. It is the spirit of continuous improvement that sets Eastern Highland Healthy Cake House as a leader in cake and bread making, offering a healthy choice for vegetarians.
